Friends for Coffee Victoria Sandwich

Who doesn't like a lovely big sponge cake, our builders certainly do. It has become tradition that we take our builders cake on a Friday. Most of the time I bake something, but if I not we walk to our favourite cafe in Padstow Harbour, Cherry Tree's and buy them all a piece. Emma at Cherry Tree's make's the most fantastic cakes and her Victoria Sandwich is a favourite and my inspiration for this receipe. Her's is three tiers and she uses butter icing.

My take is to use just two tiers as my sponges rise really well and I like to use fresh cream so that the overall taste is not too sweet.

What ever your cream or jam preference, the key is to make it your own.

This recipe is super easy and yet such a show stopper. Your friends will feel very special when you bring this to the table with their coffee.
